PURPOSE OF THE JOB:
The incumbent will execute flavourful and quality meals to clients, design creative menu ideas, and conduct pricing structures to obtain customer satisfaction with minimum cost of sales. Ensure that HACCP regulations are implemented and carried out at all times.
QUALIFICATIONS AND EXPERIENCE:
- National Diploma: Culinary / Hospitality Management
- 2 – 3 years of food production in a Hospitality environment
CRITICAL PEROFORMANCE AREA
The incumbent will be responsible to perform the following functions but not limited to;
- The effective control Cost of Sales, control portions and quantities to be cooked on a daily basis.
- Monitor inventory to ensure minimum stock levels are maintained
- Achieve targeted gross profits through effective portion control and wastage limitation.
- Check quality of raw and cooked food to ensure that standards are met.
- Continuously demonstrate new cooking techniques and innovation in order to meet industry standard.
- Supervise, train & coordinate personnel in food preparation area.
- Coordinate planning, purchasing and communicate with project leaders to ensure smooth operations during events.
KNOWLEDGE & FUNCTIONAL SKILLS
- Knowledge of kitchen appliances, how to be able to use them
- Knowledge of Health & Safety, Food Safety
- Problem solving techniques
- Menu design and costing
